One of last year’s top product innovations was ultra thin sliced cheese (Sargento). Each ultra thin slice is approximately 1 millimeter thick, half the 2 mm for a regular slice. This marketing can be great for artisan cheese producers who can sell ultra thin slices so there are more perceived servings for a lower price. This marketing technique allows the cheese maker to offer a lower calorie count product serving without any of the objections associated with diet, light, low fat and reduced calories product versions. Consumers can get the real thing and the desired lower calorie and fat content. Successfully offering ultra thin cheese slices requires good equipment to slice the cheese thinner and inserting paper between slices during packaging, so they won’t stick together and tear apart.
