750 mL bottle = 25.4 ounces
dash = 02 ounces
tsp. = .16 ounces
Tbs. = .48 ounces
Target pour cost = Cost of Ingredients/Retail sales price of drink = 18% – 24%
In calculating drink costs, be sure to include all of your key Ingredients
mixers
garnishes
alcohol
(entertainment) If you have a band or other entertainments, you should include these extra costs into your drink costs for these events.
Typical Mark-up Targets
Wine – 300% by the bottle; 400% by the glass
Liquor – 400% – 500%
Draft Beer – 400%
Bottled Beer – 300% – 400%
Premium Pricing – the price does not have to be the same every day
Drink prices can be higher on nights the bar offers a band, KJ or DJ.
Drink prices can be higher when prepared and served with flair – charge for the personalized attention and entertainment.
Food: High Profit Menu Items and Typical Profit Margins
Pasta – 600% -1,000% mark up
Pizza – Up to 800% mark up
Risotto – 600% – 1,000% mark up
Salads – Up to 800% mark up
Eggs – 500% mark up
